Why “The Permit Plane”?

Named after the permits, paperwork, and planning that keep big jobs moving safely and efficiently.

The Permit Plane takes inspiration from the modern Paper Plane cocktail and rebuilds it with Tallman 75th Reserve Bourbon for a richer, smoother finish with bold citrus and bittersweet depth.

Ingredients:

  • 3/4 oz Tallman 75th Reserve Indiana Straight Bourbon Whiskey
  • 3/4 oz Aperol
  • 3/4 oz Amaro Nonino
  • 3/4 oz fresh lemon juice
  • Ice

Garnish

  • Lemon twist

Method:

  1. Add all ingredients to a shaker with ice.
  2. Shake hard for 12-15 seconds until thoroughly chilled.
  3. Double strain into a chilled coupe glass.
  4. Garnish with a lemon twist.

Simple proportions. Perfect balance.
